One of my favorites to cook over the campfire-
Slice potatoes, put them on tinfoil and add butter, onions, mushrooms, green pepper and sausage or bacon wrap it in the tinfoil and slowly cook over the fire (or in the oven).....mmmmm

my favorite is macaroni salad.

Place 2 cups uncooked macaroni in boiling water and boil until tender. Drain well in colander. In large bowl, mix macaroni with 1 cup miracle whip (or mayonaise), add 1-1/2 teasp. seasoned salt and 1/8 cup sugar, 1/2 teasp. onion powder, 1 teasp paprika and one dozen hard-boiled eggs (sliced and diced). chill about 1 hour before serving. top lightly with paprika before serving.

Picnic sounds like fun, but I always try to combine eating with fun activities. So, when we go on picnic I am looking for place close to water ( so I can fish :-) Then my favorite dish would be a fish ( if I don`t cutch anything ,there is always VONS or other store ...lol ) .
This is my preferable fish dish :

INGREDIENTS:
4 fish fillets (cod, red snapper, etc.)
2 cups instant mashed potatoes
2 tablespoons butter, melted
2 tablespoons lemon juice
1 tablespoon olive oil
2 cloves garlic, minced

PREPARATION:
Preheat grill. Combine melted butter, lemon juice, olive oil and garlic in a shallow dish. Dip fish fillets in butter mixture and roll in potato flakes to coat. Wrap each fillet in aluminum foil and place on medium-hot grill
Grill for 6 to 8 minutes, turning once. Remove when done
