Hi poker peoples!

I hope many of you have the same kind of memories I do of childhood summertime picnics.

Usually we would have more than just one family involved and we would go somewhere in the great outdoors away from our houses to gather for a picnic on a holiday or weekend.

We wouldn't take just sandwiches, either, and definitely not fast foods. Our picnic baskets or tubs or boxes would be filled with home-cooked food that was just perfect for enjoying under the shade trees together.

Often we had such things as home-fried chicken, deviled eggs, all kinds of prepared veggies and deserts. And of course an ice-filled tub or barrel of soft drinks.

Or sometimes we took along barbeque grills and cooked the food there. Sometimes even cooked it over a campfire, wrapped in foil and baked in or above the hot flames or embers.

For this contest, give us a recipe for something that sounds good to you for just such an event. Even if you have to make up a recipe on the spot just for the contest here.

Post your entries below. I will take your suggestions for how this contest should be judged, but we have only one $30 cash prize to give.

Usual rules. If you have any question at all about the rules, please let me know.

Looking forward to your recipes for a good outdoor meal, whether remembered or just now created!

Well no campfire is complete without S'mores!!

Take two halfves of a graham cracker
4 Squares of a chocolate bar
Toast one marshmellow on a stick over a fire till it is golden brown and soft and gooey
Place chocolate bar on one half of a graham cracker
Put hot marshmellow on the chocolate and put the other half of graham cracker on top.

Eat and get messey and sticky!

Barbeque chicken is always a favorite but definately home-made potatoe salad too! Many times we made deviled eggs to go along with it.

Deviled eggs:
Hard boil 6 eggs (or more)
After cooling and peeling eggs you cut them in half length-wise and remove the yolk into a bowl.
(an easy trick to peeling eggs is to immediately after boiling and draining run VERY cold water over them till cool Then they peel extremely easy.)

In the bowl with the yolks you add:
Mayonaise
Mustard
Diced up pickles
Salt and pepper

Mix well with yolks and add more mayo if needed to make them creamy.
After they are well mixed you take a spoon and spoon yolk mixture into the halfs of the egg white shell.

Add a little parsley or sprinkle a dash of paprika over the top.

Pop an egg in your mouth and say ,"mmmmmmmm good!"

Another BBQ item is barbequed corn.

Take an ear of corn and place on a piece of tin foil cut to just wrap each corn cob completely.
Add a pat of butter, salt and pepper. Completely seal the corn on the cob in the tin foil and put on the BBQ.

Do some fresh caught fish the same way as the corn but add a slice of lemon. (If you don't want to fry it, this way is great!)

We also would take baked beans with bacon slices in them.

Home-made potato salad:

Boil potatos till soft but slightly firm. Cool immediately in cold water.
We like to leave the skin on but some people prefer them skinned.
An easy way to skin potatos is after you boil them and cool them down but some people prefer skinning before boiling.

Cut boiled potatos into bite sized pieces.
Add maynoaise, mustard, salt, pepper to taste.
We like to add diced pickles and sometimes fresh green peas to ours. Once in awhile paprika.

baked beans are always a favorite at our family barbecues.

2 large cans butter beans, drained
2 large cans tomato sauce
2 lbs dark brown sugar,
3 lbs sliced bacon

alternate ingredients in a large stock pot or oven safe bowl. bake at 350o for 5 hours or until beans are cooked and sauce is thick.

On the Australian Coat of Arms, two of the indigenous fauna feature prominently, the Kangaroo and the Emu. How many countries allow you the visit the animals and feed them to you!!

Ahhh, that old Aussie humour!

Emu Sausages

Ingredients:

* 500g emu steak, ground
* 2 egg whites
* 3/4 cup bread crumbs (a good sourdough adds a touch of bite)
* 1/2 cup minced onions
* 3/4 tsp minced garlic
* 1 tsp salt
* 1/2 tsp freshly ground pepper
* Up to 1 tbsp of dry mustard (to taste)
* 1/2 cup apple puree
* 1 tsp dry sage

Method:

Gently beat the egg whites until white, blend in the all the ingredients except the emu and apple puree. Then (with your hands) mix in the emu and apple puree. Be gentle as a bit lumpy is quite ok.

Form into sausages and chill until ready to cook (up to 4 hours beforehand).

Grill over a medium heat (add applewood smoke if desired) but don't let the sausage dry out.

Slice and serve.

Kangaroo Sausages

There are two schools of thought with kangaroo cookery: very slow and in a rich thick sauce, or very quickly so that the meat is very rare. With the gameness and lack of fat I've found that either way works well.

Ingredients:

* 500g kangaroo steak, ground
* 1/2 cup breadcrumbs (soak in a big, bold Australian Red wine, just enough to get breadcrumbs damp)
* 1/2 cup minced onion
* 1 tsp minced garlic
* 2 egg whites
* 1/2 tsp chopped fresh coriander (cilantro) and optional (but recommended)

Method:

Gently beat egg whites until white, add everything and mix lightly. Form into sausages and chill until required (can be prepared up to 4 hours before cooking).

Over a medium high grill cook sausages quickly, and do not allow to dry out.
Smoked with apple wood works really well.


Kangaroo

Cut kangaroo fillets into cubes and marinate in olive oil, wine, and herbs and spices such as oregano, thyme and bay leaf. Skewer with slices of onion and capsicum and char-grill. Serve with a tzadziki (yoghurt and cucumber dip) with slivers of roasted kalamata olives.

Raspberries and Cream Salad
This recipe is so good that if you make it for a special occasion
(birthday, graduation, anniversary, holiday or family dinner)
don't expect any leftovers!

2 6-ounce packages of raspberry Jello
2 cans raspberry pie filling
1 cup sugar
1 12-ounce container of Cool Whip (or other topping)
1 8-ounce package of cream cheese
2 cups crushed pretzels
1 cup crushed walnuts
2 tablespoons sugar
1/4 cup melted butter (or margarine)

Prepare the raspberry Jello with boiling water according to
package directions. Mix in the raspberry pie filling. Place in
the refrigerator until set.

Allow the Cool Whip (or other topping) and the cream cheese to
warm to room temperature. Whip the topping, cream cheese and 1
cup of sugar until smooth and thoroughly mixed. Spread over the
Jello mixture.

Melt the butter (or margarine) in a saucepan. Add 2 tablespoons
sugar, the crushed pretzels and crushed walnuts. Stir thoroughly.
Sprinkle over the topping/raspberry Jello.

Keep refrigerated until you are ready to serve

Hi all!!! My 1st post here, but a Crusher through 'n through.......
Not really an *exact* recipe...but

Every summer we camp out at the lake & my favorite meal is over an open campfire with our own grill tossed on top!!!!
A roll of foil and:
1-potatoes wrapped & put down into the pit
2- ears of corn wrapped and placed on top
3- your favorite meat entree (I get whats on sale!) lol
*love pork steaks -NOT CHOPS- 'cuz the fat kinda kinda burns & makes 'em taste yummy- no seasoning/sauce required!
4-apples are great for dessert- no mess-no fuss- n great for you too!

**Mmmm I'm sooooooo hungry now jis thinkin' about it all!! lol

Very Happy Very Happy That does sound real good.I always took the potatoes and carrots and a chunk of meat and made each child there own in their own piece of foil over the open camp fire and called it hobo stew......

we like to simply grill marinaded steaks that have been in the fridge for 24 hours. wrap redskin potatoes in foil and corn on the cob and throw it all on the grill. easy and fuss free. of course homade potatoe salad as a side and icecream or a nice bowl of fresh fruit for dessert.

Slotmom reminded me of another recipe we make all the time.

Fruit Salad/Dessert

Get any flavored kind of jello you like and prepare as directed.
Add sliced bananas, cherries, ANY fruit that will go with your jello flavor or mix and match. we like to put in pinapple, sliced bananas and cherries/berries.. really a lot of things.

Mix in with the jello mixture and put in refridgerator till set. Once firm take a warm knife slice the jello into bite-sized cubes.

Take a large container of whipped topping (not the canned kind it gets too runny) or make your own whipped topping which I prefer.

Gently fold in the whipped cream into the jello cubes and if you like it festive add food coloring to your whipped cream before folding into the jello.

You have a very delicious dessert that is actually good for you in the fruit dessert! Kids love it and they also love to help make it!

I don't remember who the person was; a friend of a friend of a friend........, but I got the recipe before I left Wink

These beef kabobs are made with sirloin beef

Cook Time: 20 minutes
Ingredients:
1/2 cup soy sauce
3 tablespoons honey
2 tablespoons vinegar
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ginger
3/4 cup oil
1 green onion, chopped

2 1/2 pounds boneless beef top sirloin, cubed 1-inch
1 (8oz) can pineapple chunks, drained (or fresh, prepared chunks)
3 green bell pepper, cut in 1-inch chunks
2 red onions, cut in 1-inch wedges
10 long metal skewers

Preparation:
In a large plastic food storage bag, combine soy sauce, honey, vinegar, ginger, garlic powder, oil, and green onion. Add sirloin cubes and marinate several hours or overnight.

Drain meat. Skewer beef, pineapple, and vegetables in an alternating pattern. Grill over hot coals for 18 to 20 minutes.
Serves 8.

Creamy Mango Smoothies

2 mangoes, seed removed, peeled and chopped (2 cups)
2 cups mango sorbet
2 containers (6 oz each) Yoplait® Original 99% Fat Free French vanilla yogurt
1 1/2 cups fat-free (skim) milk or soy milk


1. In blender, place all ingredients. Cover; blend on high speed until smooth.
